Ingredients for 2 servings:

  • 750 ml milk
  • 40 g butter
  • ½ vanilla pod(s)
  • 4 tbsp sugar
  • 1 tsp lemon(s) – zest, grated
  • 250 g tagliatelle pasta
  • Salt

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Bring the milk to a boil with the butter, the vanilla bean (sliced ​​lengthwise), sugar, and lemon juice, and add the pasta. Add a pinch of salt and cook over moderate heat until the pasta is tender and the liquid has almost completely evaporated. This will take a little longer than normal cooking, about 20-25 minutes. It’s important not to turn the heat too high, or the pasta will become too soft, but not too low, or too much liquid will remain. Serve with the compote. Variation: Use 1/2 cinnamon stick instead of the vanilla bean to make cinnamon noodles.
