Ingredients for 2 servings:
- 750 ml milk
- 40 g butter
- ½ vanilla pod(s)
- 4 tbsp sugar
- 1 tsp lemon(s) – zest, grated
- 250 g tagliatelle pasta
- Salt
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
Bring the milk to a boil with the butter, the vanilla bean (sliced lengthwise), sugar, and lemon juice, and add the pasta. Add a pinch of salt and cook over moderate heat until the pasta is tender and the liquid has almost completely evaporated. This will take a little longer than normal cooking, about 20-25 minutes. It’s important not to turn the heat too high, or the pasta will become too soft, but not too low, or too much liquid will remain. Serve with the compote. Variation: Use 1/2 cinnamon stick instead of the vanilla bean to make cinnamon noodles.
