Red scrambled eggs with mushrooms

Ingredients for 2 servings:

  • 4 eggs
  • 2 tbsp paprika paste
  • 250 g mushrooms, brown
  • 1 bunch of spring onions
  • 2 tbsp vegetable oil
  • Salt
  • pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

with paprika paste and spring onions

Slice the mushrooms and slice the spring onions. Heat the oil in a pan and sauté the mushrooms and the white parts of the spring onions, seasoning with salt and pepper. Place the paprika in a bowl and gradually whisk in the eggs. When the mushrooms and onions are cooked, add the egg mixture to the pan and stir continuously until set. Finally, fold in the green part of the spring onions and serve with a slice of multigrain bread.
