Vegetarian pepper and corn meatballs

Ingredients for 4 servings:

  • 250 g bread(s) (from the previous day)
  • 2 eggs
  • 150 g low-fat curd cheese
  • 1 red bell pepper(s) (diced)
  • ½ can corn
  • possibly oat flakes
  • Salt
  • pepper
  • nutmeg
  • Paprika powder
  • 1 bunch of chives (rolled)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

delicious use up of leftovers!

Dice the bread. Whisk the eggs with salt, pepper, nutmeg, and paprika. Pour over the bread and let it swell briefly. Knead in the quark, vegetables, and chives. If the mixture is too soft, knead in a few oat flakes. Form into rounds and roll them all over in the oat flakes. (The rounds will be very soft, but that’s OK as long as you can shape them.) Heat oil in a non-stick pan and fry the rounds over medium heat until golden brown. We serve it with a mixed salad.
