Apple and leek salad with red peppers

Ingredients for 4 servings:

  • 3 large spring onions, finely sliced
  • 1 large red bell pepper(s), medium diced
  • 1 stalk(s) leek, large, without greens, in fine rings
  • 2 large apples, with peel, without core, diced
  • 100 ml whipped cream
  • 100 ml milk
  • 100 ml sour cream
  • 4 tbsp lemon juice
  • 2 garlic cloves, pressed
  • 3 cm Harissa, from the tube
  • ½ tsp chili salt, or equivalent salt and chili powder (optional)
  • 1 tbsp thyme, dried
  • Sugar, n. B.
  • Salt
  • Pepper, white
  • Paprika powder

Instructions

Working time approx. 20 minutes; Rest time approx. 10 minutes; Total time approx. 30 minutes

This salad is a satisfying side dish, for example, with pan-fried poultry. Mix all the sauce ingredients well and let it sit for a short while. Mix the diced vegetables and fruit in a large bowl, then divide them among serving plates. Pour the sauce over the salad and sprinkle with paprika to serve.
