Ingredients for 2 servings:
- 1 can white beans, well rinsed
- 1 carrot(s)
- 2 tomatoes
- 1 piece(s) celeriac, approx. 5cm length
- 1 stalk(s) celeriac
- 500 g potatoes
- 1 onion(s), finely chopped
- ½ small olive oil
- 1 tbsp oregano
- Broth, granulated
- Parsley, fresh
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes

Sauté the onion in oil until translucent. Dice the tomatoes. Cut the celery (both varieties), carrot, and potato into equal-sized pieces. Add everything to the onions and cover well with water. Cook until everything is nice and soft. Then add 2/3 of the beans. Purée everything with a hand blender until well combined. Season with granulated stock, salt, and pepper. Add the oregano and the remaining beans. Heat well again until everything is the same temperature. Garnish with the parsley and serve with fresh bread.
