Zucchini and tomato casserole

Ingredients for 2 servings:

  • 1 large zucchini
  • 4 m.-sized tomatoes
  • 2 packs of mozzarella
  • 1 garlic clove(s)
  • 50 ml sunflower oil
  • 20 ml olive oil
  • 5 basil leaves
  • salt and pepper
  • Paprika powder or pizza seasoning

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 55 minutes

Preheat the oven to 220°C. Slice the tomatoes, zucchini, and mozzarella. Fill a baking dish with the slices. Alternate between zucchini, tomatoes, mozzarella, zucchini, tomatoes, mozzarella, etc. Mix the two oils together, finely chop the garlic, and add. Season generously with salt and pepper, and add paprika or pizza seasoning. Chop the fresh basil (dried or frozen basil also works) and mix everything together. Drizzle the oil mixture over the ingredients in the baking dish. Bake for 35 minutes.
