Ingredients for 2 servings:
- 1 sweet potato(s)
- 2 zucchinis
- 250 g cocktail tomatoes
- 1 cup sour cream
- 1 clove(s) garlic
- 2 sprigs of rosemary
- 1 dash of olive oil
- salt and pepper
- 1 ball of mozzarella
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes
Peel the sweet potato, wash the zucchini, and then thinly slice both. Quarter the cherry tomatoes. Place the vegetables in a bowl, add olive oil, and season with salt and pepper. Add the garlic and rosemary (whole stalks) and mix. Pour the sour cream into the bottom of a baking dish and spread the vegetables over it. Place the sliced mozzarella on top and bake at 180°C (fan oven) for about 30 minutes on the middle rack.
