Cucumber salad with feta cheese

Ingredients for 4 servings:

  • 1 cucumber(s)
  • 2 tomatoes
  • 2 spring onions
  • 200 g sheep’s cheese
  • pepper
  • Salt
  • Paprika powder, hot
  • olive oil
  • Balsamic vinegar
  • Parsley, fresh chopped
  • Chives, freshly chopped

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Quarter the cucumber lengthwise and cut into approximately 5mm-thick slices. Dice the tomato and feta cheese, and thinly slice the spring onion. Mix the ingredients in a bowl, add the herbs and spices, and drizzle with a generous amount of vinegar and oil. Ideal as an appetizer.
