Ingredients for 2 servings:
- 2 portions of mixed salad (e.g. arugula, baby spinach, lollo rosso, lollo bionda, romaine lettuce)
- 1 ball(s) of mozzarella (preferably buffalo mozzarella)
- 2 peaches or nectarines
- 1 handful of hazelnuts
- e.g. Parma ham, sliced
- salt and pepper
- Walnuts
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
You’ll need a variety of lettuce: arugula, baby spinach, lollo rosso, lolo bionda, and romaine lettuce. Add two peaches or nectarines, with or without skin (cut into bite-sized pieces). Tear a ball of mozzarella into bite-sized pieces. Add a few slices of Parma ham (somewhat torn) on top. Now roughly chop a few hazelnuts (it’s best to wrap them in a kitchen towel and smack them with something to create chunky pieces) and add them to the salad. Season to taste with salt, pepper, and walnut oil. You can toss the salad together or simply pile everything up!
