Egg and cheese patties

Ingredients for 2 servings:

  • 4 m.-sized eggs
  • 1 tbsp condensed milk, soy milk or cream
  • 200 g grated cheese or Parmesan
  • salt and pepper
  • some parsley, finely chopped
  • 1 tbsp olive oil, for frying

Instructions

Working time approx. 15 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes

Boil the eggs, let them cool, and cut them into small cubes. Knead them with the cheese, milk (or cream), salt, pepper, and parsley. Add a little more grated cheese if desired, until the mixture is easy to shape. Form the mixture into 4 large or 8 small balls. Meanwhile, heat the oil in a non-stick pan. Place the balls in the hot oil. If desired, use a spatula to form them into flat patties. Fry them on both sides until crispy and brown. Serve with cauliflower, broccoli, spinach, or mixed vegetables.
