Ingredients for 1 servings:

  • 1 small zucchini
  • 100 g chanterelles
  • 20 g butter
  • 2 eggs
  • 60 g mini mozzarella
  • 1 tbsp sour cream
  • ½ small onion(s), optional or fried onions
  • some salt and pepper
  • 1 pinch of chili flakes
  • some parsley for sprinkling

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

with chanterelles, zucchini and egg

Clean the chanterelles. Wash the zucchini, trim the ends, and cut the zucchini into small pieces. If you want to use fresh onion, dice it. Chop the parsley finely. Put the butter in a pan. Lightly fry the onion and chanterelles. Shortly after, add the zucchini and cook until the zucchini reaches the desired consistency. Crack the eggs into the pan. Add the spices and sour cream and mix well. While the eggs are still not quite set, add the mini mozzarella balls. Mix briefly and let everything set a little. If you want to use fried onions, you can add them now. Sprinkle the dish with some parsley and serve immediately.
