Kohlrabi or radish salad

Ingredients for 4 servings:

  • 4 kohlrabi or 1 large white radish or both
  • 4 tbsp soy sauce, dark
  • 2 tbsp honey
  • 4 tbsp white wine vinegar or lime juice
  • 3 tbsp water
  • 6 tbsp oil (rice oil or 3 tbsp rapeseed oil + 3 tbsp sesame oil)
  • 2 garlic cloves, finely chopped or squeezed
  • Sesame, white, roasted
  • salt and pepper
  • chili powder

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Asian flavor

Peel the vegetables you’ve chosen and grate them into a large bowl as finely as you like using a vegetable grater (thin slices are also fine). To make the dressing, simply mix all the remaining ingredients except the sesame seeds with a spoon or whisk. Mix the dressing thoroughly with the grated raw vegetables. Taste and season to taste with salt, pepper, and chili. Just before serving, sprinkle a few toasted sesame seeds over each serving. This dressing also goes well with carrot salad and white cabbage, but in this case, you should let the salad marinate in the refrigerator overnight.
