Tomato bread salad

Ingredients for 1 servings:

  • 3 tomatoes
  • 1 small onion(s)
  • 50 g cheese (Gouda, Feta, Mozzarella…)
  • 2 slices of bread
  • 1 tsp honey
  • 1 tsp mustard
  • 1 tbsp balsamic vinegar
  • 4 tbsp olive oil
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

with honey-mustard dressing

Make a dressing with honey, mustard, vinegar, and oil. Season with salt and pepper to taste and dice or finely slice the small onion. Dice the tomatoes and grate or dice the cheese (I use whatever cheese is in the fridge. Gouda and feta have proven to be delicious!). Toast the bread in the toaster or oven until crisp and brown. Remove and cut into bite-sized pieces (I leave them larger so they don’t get soggy quite as quickly). Combine everything in a bowl with the dressing and mix.
