Seasonal salad with spring-fresh herbs

Ingredients for 4 servings:

  • 1 head of lettuce, small to medium
  • 4 eggs, hard-boiled
  • 100 g radishes
  • 1 apple
  • 2 spring onions
  • 150 g low-fat yogurt
  • 2 tbsp balsamic vinegar, white or basil vinegar
  • 1 pinch of horseradish with cream
  • 1 pinch(s) of sugar
  • n. B. herbal salt
  • 1 shot of pumpkin seed oil
  • 2 tbsp herbs, chopped fresh e.g. chives, garlic mustard, wild garlic, basil, ground ivy, cress etc.

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Clean and wash the lettuce, then tear it into bite-sized pieces. Wash and slice the radishes. Wash and slice the spring onions. Wash and core the apple, and cut it into sticks. Peel and quarter the eggs. Mix everything together in a large bowl. Place the egg quarters on top. Mix together the dressing ingredients and drizzle over the eggs and lettuce. Sprinkle the chopped herbs on top and serve!
