Ingredients for 4 servings:

  • 1 kg potatoes, raw
  • 2 m.-sized eggs
  • 2 tbsp flour
  • 2 tsp seasoning mix for fries
  • 1 tsp pepper
  • 2 m.-large onion(s), red
  • 1 cup water
  • 2 tsp broth, granulated
  • 6 tbsp olive oil, for frying

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

with red onions

First, peel the potatoes and grate them into sticks. Squeeze them out in a paper towel or dry cloth to prevent excess water from accumulating. Peel the onions and dice them into small cubes. Fry them in a non-stick pan and, after 2 minutes, deglaze with water and stock. Let the water evaporate so the onions are nice and soft. Mix the potato sticks, eggs, and remaining spices, along with the onions and flour, in a sufficiently large bowl. Heat the first 1.5 tbsp of olive oil in a pan, then add the first 4-5 portions of potato sticks to the pan with a tablespoon and press them flat. Fry them until crispy on both sides and then place them on the paper towel to drain. They go perfectly with anything fried—e.g., steak, schnitzel, etc. You can also refine them with a bit of bacon, or use them as a dessert without onions and instead of spices, use a little sugar and just a touch of salt. Potato pancakes with a twist, and above all, homemade!
