Colorful leek vegetables

Ingredients for 4 servings:

  • 2 stalk(s) leeks
  • 200 g mushrooms, sliced
  • 75 g soup vegetables, frozen
  • 1 small onion(s)
  • 100 ml vegetable stock
  • 75 g crème fraîche, legeré
  • salt and pepper
  • Spice mix (garden herbs)
  • some butter, for frying

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Trim and wash the leek, then slice the white part into rings. Dice the onion. Heat the butter and sauté the diced onions until translucent. Add the mushrooms, soup vegetables, and leek rings and let them cook in the butter. Deglaze with the vegetable stock and simmer for a few minutes until the vegetables are tender. Stir in the crème fraîche and season to taste. Delicious as a side dish to many meat dishes.
