Black salsify salad with dried tomatoes

Ingredients for 2 servings:

  • 1 kg salsify
  • 1 lemon(s)
  • 1 pinch(s) of sugar
  • Salt
  • 75 g dried tomatoes in oil
  • Oil (olive oil)
  • 4 tbsp vinegar (white wine vinegar)
  • 2 tbsp orange juice
  • pepper
  • 1 tsp mustard, grainy
  • bunch of chives

Instructions

Working time approx. 1 hour; Rest time approx. 1 hour; Total time approx. 2 hours

Peel and slice the salsify. Cover and cook in a little water with lemon juice, sugar, and salt. Drain the tomatoes, reserving the oil. Cut the tomatoes into thin strips and the chives into rings. Mix the vinegar, orange juice, salt, pepper, and mustard. Stir in 2 tablespoons of tomato oil (top up with olive oil if necessary). Add the chives and tomatoes. Drain the salsify and mix with the dressing while still warm. Let cool. Serve with bread.
