Kale salad with oranges

Ingredients for 2 servings:

  • 300 g kale
  • 1 orange(s)
  • 25 g pine nuts
  • 20 g goji berries
  • 3 tbsp olive oil
  • 1 tbsp white wine vinegar
  • 1 tsp miso paste
  • 1 tsp agave syrup
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 25 minutes

Superfood

First, wash the kale and remove the tough stems. Place it in boiling, salted water for one minute, then scoop it out with a ladle and place it in a bowl of cold water. Spin the blanched kale thoroughly in a salad spinner and set aside. Segment the orange over a small bowl, reserving the juice. Set the orange segments aside as well. For the dressing, mix the reserved orange juice with the vinegar, oil, and miso paste and season with salt and pepper to taste. Roast the pine nuts in a non-stick pan without oil until browned. Just before serving, toss the kale well with the dressing and arrange on plates. Arrange the orange segments on top, then sprinkle with pine nuts and goji berries.
