Applesauce with lemons or limes

Ingredients for 1 servings:

  • 5 kg apples, firm, peeled, roughly diced
  • 150 ml lemon juice or lime juice, freshly squeezed
  • 5 tbsp sugar, brown
  • Sugar, depending on taste up to 200 g
  • 1 vanilla pod(s)

Working time approx. 45 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 5 minutes

Bring the lemon or lime juice (both taste delicious combined!) to a boil in a large saucepan. Add the apple pieces and the vanilla pod and cook until the apples begin to release their liquid (about 10-15 minutes). Then add the sugar (the amount is a matter of taste and also depends on how sweet the apples are), bring back to a boil briefly, and season to taste. Remove the pan from the heat, remove the vanilla pod, and puree the apples, preferably with an immersion blender, until a smooth mixture forms. We like it cold and hot, too. For such large quantities, I pour the still-hot applesauce into jars that have been rinsed with boiling water beforehand and screw the lids on tightly. This recipe makes about 6 jars.
