Ingredients for 4 servings:

  • 1 kg potatoes
  • 2 onions
  • 2 tbsp olive oil
  • 4 eggs
  • some salt and pepper
  • 2 tbsp chives, chopped

so simple and so delicious

Peel and wash the potatoes and cut into thin sticks, slightly thinner than for fries. Peel and dice the onions. Heat oil in a non-stick pan, add the potatoes and fry until lightly browned. This takes about 10 minutes. Stir in the onions, fry for 2 minutes, season with salt and pepper. Now reduce the heat to low, place a lid on the pan and sauté for about 5 minutes, until the potatoes are tender. Whisk the eggs together in a small bowl and pour over the potato and onion mixture. Cover and wait until the eggs are just set. Sprinkle with chives and eat immediately. Serve with a mixed salad.
