Ingredients for 2 servings:
- 4 m.-sized potatoes, boiled
- 250 g bacon or breakfast bacon
- 2 m.-sized onion(s)
- 1 bell pepper(s), red
- 2 large eggs
- n. B. Black pepper, ground
- 1 tsp, crushed paprika powder, sweet
- 1 pinch of hot paprika powder
- possibly coriander leaves, parsley and/or chives
- 1 tbsp olive oil for frying
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes
with peppers, bacon and onions
Cut the bacon into small cubes, place in a pan, heat, and stir until translucent. Then add the olive oil and the diced onions. When the onions are translucent, add the diced bell peppers and spices, stir, and fry with the lid closed for 2 minutes. Cut the cooked potatoes into larger cubes—I always leave the skin on—and add them and stir well. Fry with the lid closed for another 2 minutes. Depending on the fat content of the bacon, you may need to add a little more oil. Whisk the eggs in a bowl, pour them over the bacon, and stir well until set. If available, add coriander, parsley, and/or chives along with the egg, to taste.
