Spicy apple and leek salad with curry

Ingredients for 6 servings:

  • 3 stalk(s) leeks
  • 3 apples, sour
  • 300 g cheese, e.g. Dutch, Edam, Comte
  • 1 cup sour cream
  • 1 cup of yogurt
  • salt and pepper
  • curry powder
  • 6 walnuts

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Clean the leek and slice into rings, then sauté until tender (the firmness is a matter of taste, but it shouldn’t squeak). Slice the apples, dice the cheese, and chop the walnuts slightly. Mix the sour cream, yogurt, and spices into a hearty dressing, being careful not to skimp on the curry. Once the leek has cooled, combine all ingredients and let it sit for about 2 hours (you can leave it longer if you like). This is a delicious party salad that’s still delicious the next day.
