Ingredients for 2 servings:
- 2 m.-large chicory
- 1 ball of mozzarella
- 1 handful of arugula
- 1 passion fruit
- 2 tbsp olive oil
- 2 tbsp vinegar, sweeter, e.g. balsamic vinegar rosé
- some salt and pepper
- possibly sugar, erythritol or honey
Instructions
Working time approx. 7 minutes; Total time approx. 7 minutes
with mozzarella and arugula, vegetarian
Wash the lettuce. Cut the chicory into strips, dice the mozzarella, and cut the arugula into large pieces. Place in a bowl. Halve the passion fruit and scoop out the contents with a spoon. Transfer to a screw-top jar or shaker. Add the remaining ingredients and shake vigorously. Pour over the salad and mix well.
