Winter tomato soup with apples

Ingredients for 3 servings:

  • 250 g onion(s)
  • 3 garlic cloves
  • 300 g apples, crumbly (e.g. Boskoop)
  • 1 tbsp butter
  • 2 tbsp honey, liquid
  • ¼ liter white wine or vegetable stock
  • 1 large can of tomatoes, peeled (800 g)
  • 1 tsp paprika powder, hot
  • Salt and pepper from the mill
  • 1 tsp sesame seeds
  • some thyme for sprinkling

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Peel the onions and garlic. Peel the apples and core them. Finely chop the onions, garlic, and apples and sauté them in butter over low heat. Add the honey, white wine, tomatoes with their liquid, and the spices. Simmer in a covered pot over medium heat for 25 minutes. Purée the soup and season with salt and pepper. Ladle the hot soup into bowls or cups and sprinkle with sesame seeds and thyme.
