Knautschi's leek ball soup

Ingredients for 6 servings:

  • 3 stalk(s) leeks
  • 2 Cabanossi
  • 4 Mettenden
  • 4 sausages, fine
  • 1 bunch of soup vegetables
  • 75 g bacon, diced
  • 2 shallots
  • 1 kg potatoes, waxy
  • 500 ml buttermilk
  • 200 g crème fraîche
  • 200 g processed cheese
  • 4 tsp, heaped chicken broth (paste)
  • 4 garlic cloves, squeezed
  • 1 tsp ground pepper
  • 2 liters of water
  • 1 tbsp sunflower oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Clean the vegetables and cut into small cubes or slices. Slice the sausages, except for the bratwurst. Sauté the onions, leeks, and vegetables in the oil. Add the ham, kabanossi, and the mettenden sausages. Fill with water. Add the leeks and potatoes. Bring to a boil and add the chicken soup paste, garlic, and pepper. Stir in the cream cheese and let it melt. Remove the bratwurst from their skins, form balls, and drop them into the soup. Stir in the crème fraîche and buttermilk. Do not boil again!
