Ingredients for 2 servings:
- 100 g cheese, Gouda
- 700 g potatoes
- 1 onion(s)
- 2 garlic cloves
- 1 apple, sour
- 80 g sunflower seeds, roasted + ground
- 1 tsp mustard seeds, ground
- 4 grains of pepper, ground
- 4 tbsp brown rice, ground
- 2 pinches of nutmeg, freshly ground
- 1 tsp spice mix (Delikata)
- 1 tsp salt
- 1 pinch(s) of sugar
- 2 eggs
- Fat, for 2 frying pans 20 cm each with lid

Coarsely grate Gouda, potatoes, onion, garlic cloves, and sour apple. Grind together the roasted sunflower seeds, mustard seeds, peppercorns, and brown rice. Combine all ingredients, pour into two 20cm frying pans greased with fat, smooth the surface, cover, and cook over medium heat for about 40 minutes. Shake the pan, place a cutting board on the pan, turn over, and slide the mashed potatoes back into the pan. Cook uncovered for another 20 minutes. Serve with apple compote.
