Ingredients for 3 servings:
- 1 kg potatoes, coarsely grated
- 1 tsp salt (seasoning salt)
- 6 tbsp potato flour, less or more (old/new potatoes)
- 1 bell pepper(s), red, diced
- ¼ tsp nutmeg, grated
- 150 g feta cheese, sheep or goat, diced
- 150 g cheese, goat cheese 50% coarsely grated
- 3 eggs
- 3 tbsp soy sauce (tamari)
- 4 tbsp Balsamic vinegar de Modena
- Oil, rapeseed or olive oil

Mix the potatoes and Modena sauce, pour into three greased pans, press down evenly, cover, and bake at 1.5 of three possible heat settings for about 45–60 minutes. When it shakes easily in the pan, remove the lid, place a suitable board on top, turn it over, and let it slide back into the pan, then bake for about 10–20 minutes at the same heat setting, as desired. Serve with a seasonal salad. Enjoy.
