Ingredients for 4 servings:

  • 6 slice(s) toast bread (sandwich toast)
  • 60 ml olive oil
  • 1 large garlic clove(s)
  • 70 g olives, black
  • 300 g tomatoes
  • Basil, fresh
  • salt and pepper
  • 20 g Parmesan or cheese of your choice

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Press the garlic into half of the oil and stir to combine. Quarter the bread slices, drizzle with the garlic oil, and roast in the oven at approximately 200°C for about 5 minutes. Drain the olives, remove the seeds and stem ends from the tomatoes, and finely dice. Finely chop the basil leaves. Mix the tomatoes, olives, and basil together and season with salt and pepper. Spread the mixture on the bread slices, sprinkle with cheese, and drizzle with the remaining olive oil. Bake the crostini at 200°C for another 5-7 minutes.
