Vegan BBQ pulled jackfruit pizza

Ingredients for 1 servings:

  • 70 g spelt flour
  • 40 g lupin flour or more spelt flour
  • 1 pinch(s) of sugar
  • ½ tsp salt
  • 2 g dry yeast
  • 70 ml water, lukewarm
  • 1 large tomato(s)
  • 1 tbsp tomato paste
  • 1 pinch(s) of sugar
  • 1 pinch of salt
  • 1 pinch of chili powder
  • 1 can jackfruit, 565 g, drained
  • 1 m.-sized onion(s)
  • 1 clove(s) garlic
  • 1 tsp paprika powder
  • 1 pinch(s) smoked salt
  • 1 pinch of chili powder
  • 70 ml barbecue sauce, vegan
  • 1 tbsp oil for frying
  • 100 ml soy milk (soy drink)
  • 5 g cornstarch
  • 10 g yeast flakes
  • 1 pinch of salt
  • 1 pinch of chili powder

Instructions

Working time approx. 25 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 30 minutes; Total time approx. 12 hours 55 minutes

For the pizza dough, mix the spelt flour and lupin flour with the yeast, sugar, and salt. Then add the water and knead vigorously for at least 5 minutes. Let the yeast dough rest in the refrigerator for 12-24 hours, ideally. Two hours before further processing, remove the yeast dough from the refrigerator and let it rise in a warm place. If you want to prepare the pizza as quickly as possible, let the dough rise in a warm place for about 60-90 minutes. In the meantime, prepare the pulled jackfruit. Drain the jackfruit in a sieve and discard the liquid from the can. Peel the onion and garlic, cut into thin strips or press them. Heat the oil in a pan, fry the onion and garlic, add the jackfruit pieces, and fry. Then pour in the tap water and add the spices. Simmer until the water has completely evaporated and the jackfruit is soft, then use two forks to pull the jackfruit pieces apart until stringy. Add the BBQ sauce and mix. Remove the pan from the heat and set aside. For the tomato sauce, wash and clean the tomatoes and puree them with the remaining ingredients. Set the sauce aside. For the cheese sauce, place all ingredients in a saucepan, mix, and bring to a boil. Let the cheese sauce simmer for a few minutes while stirring. Preheat the oven to 180°C. Roll out the pizza dough into a circle and place it on a baking sheet lined with parchment paper. Spread the tomato sauce, pulled jackfruit, and cheese sauce over the pizza. Bake for approximately 30 minutes.
