Vegan pasta with mushrooms

Ingredients for 1 servings:

  • 90 g pasta
  • 4 mushrooms
  • 2 tbsp cream cheese substitute, vegan
  • 1 handful of baby spinach
  • 1 dashes oil
  • 3 pinches of salt
  • 1 handful of arugula

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes

Cook the pasta according to the package instructions. Meanwhile, sauté the mushrooms in a pan with the oil. When they’re golden brown, add the cream cheese and about 4 tablespoons of the pasta water. Stir everything together, then add the baby spinach and season with salt. Now add the drained pasta to the pan and mix everything together, then serve on plates. You can top with arugula. About 550 kcal per serving.
