Zucchini omelette

Ingredients for 2 servings:

  • 2 onions
  • 1 clove(s) garlic
  • 400 g zucchini
  • 1 beefsteak tomato(s)
  • 4 eggs
  • bunch of parsley
  • 50 g cheese, grated
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Slice the onions. Then crush the garlic. Slice the zucchini. Fry everything in hot oil for about 5-10 minutes. Meanwhile, deseed the tomato, cut it into pieces, and add it to the pan. Season with salt and pepper. Beat the eggs and a little salt with a fork and stir in the coarsely chopped parsley. Pour over the vegetables. Sprinkle with grated cheese. Let it set for about five minutes.
