Ciabatta with mushrooms and zucchini

Ingredients for 4 servings:

  • 1 large zucchini
  • 250 g mushrooms
  • 2 garlic cloves
  • 6 tbsp olive oil
  • 4 rolls (ciabatta rolls)
  • 250g mozzarella
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

First, peel the zucchini and cut into thin slices. Clean the mushrooms and also slice them. Peel and finely chop the garlic, mix with 5 tablespoons of oil, and set aside. Heat 1 tablespoon of oil in a pan, fry the zucchini and mushrooms, and season with salt and pepper. Then set aside. Slice the mozzarella. Cut open the bread rolls and brush them with the garlic oil. Spoon the zucchini and mushroom mixture onto them and top with the mozzarella. Bake in the oven for 10 minutes (180 degrees fan-assisted, preheated!). Super delicious and also suitable for parties.
