Ingredients for 4 servings:

  • 200 g potatoes, floury, cooked
  • 1 egg(s), hard-boiled
  • 50 g butter, soft
  • 1 small onion(s)
  • 1 m.-large gherkin(s)
  • 1 bunch of chives
  • 1 tsp sweet paprika powder
  • 1 pinch(s) caraway seeds, whole or ground
  • 1 tsp mustard, hot
  • possibly sour cream, 1 – 2 tbsp or crème fraîche
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cream the butter with the mustard until fluffy. Finely chop the egg, onion, and gherkin and add to the butter. Press the cooked potatoes through a ricer into the butter mixture and mix well. Season with caraway, salt, pepper, and paprika. If desired, add sour cream or crème fraîche to make the spread easy to spread. Sprinkle with chives.
