Ingredients for 4 servings:

  • 400 g beans (bush beans)
  • 2 onions
  • 3 tomatoes
  • 2 zucchinis
  • 1 chili pepper(s), possibly 2
  • 2 tbsp tomato paste
  • 1 tbsp Italian herbs (frozen)
  • 1 stalk(s) leek
  • salt and pepper
  • 1,250 ml vegetable stock
  • 2 tbsp olive oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes

Chop the onions into small pieces and sauté them in olive oil in a large pot until translucent. Chop the beans, tomatoes, zucchini, leek, and chili into small pieces. Add the broth to the pot with the onions. Then add the vegetables, tomato paste, and herbs. Simmer everything for about 40 minutes and season with salt and pepper.
