Vegetarian pasta casserole with vegetable strips

Ingredients for 4 servings:

  • 500 g pasta (e.g. penne)
  • salt water
  • 2 large zucchini
  • 3 large carrots
  • 1 can of corn
  • 2 cans of tomatoes, pureed
  • 150 g cheese, grated
  • some salt and pepper
  • Mixed herbs of your choice

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Cook the pasta in plenty of salted water until al dente, then drain. Meanwhile, wash, peel, and grate the carrots. Wash and grate the zucchini. Place the pasta in a large pot and mix with the corn, vegetable strips, and passata. Season to taste and garnish with herbs, if desired. Lightly grease a baking dish and add the pasta and vegetables. Sprinkle with grated cheese and bake at 180°C (fan oven) for about 30 minutes.
