Pizza with peppers and mozzarella

Ingredients for 2 servings:

  • 225 g flour, fine (wholemeal spelt flour)
  • 125 g quark, low-fat
  • 1 egg yolk
  • 4 tbsp oil (safflower oil)
  • ½ pack of baking powder
  • ½ tsp sea salt
  • 1 tsp butter for the mold
  • 1 large onion(s)
  • 2 bell peppers, green and red
  • 1 tsp dried oregano
  • 1 tsp basil, dried
  • 125g mozzarella
  • 1 bunch basil, fresh
  • 2 tbsp olive oil, cold-pressed
  • herbal salt

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Knead the flour with the quark, egg yolk, oil, salt, and baking powder into a smooth dough. Grease the pizza pan with butter. Pour the dough into the pan and spread it out with your hands until the bottom is covered, then form a rim. Peel the onion and slice it into thin rings or grate it. Wash, halve, deseed, and thinly slice the bell peppers. Heat the oil in a pan and fry the onion rings until translucent. Add the bell pepper strips and fry for 3-5 minutes. Season everything with herb salt, basil, and oregano. Drain the mozzarella and cut into thin slices. Spread the vegetables on the dough and place the cheese slices on top. Bake the pizza in a preheated oven (180°C fan/convection oven) for about 20 minutes.
