Tagliatelle with vegetable sauce

Ingredients for 4 servings:

  • 500g tagliatelle
  • 1 small cauliflower, approx. 1 kg
  • 1 onion(s)
  • 1 bell pepper(s), red
  • 1 small bunch of parsley
  • 200 g cream cheese
  • 1 tsp vegetable stock powder
  • oil
  • salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Finely dice the bell peppers and onion. Cut the cauliflower into small florets. Heat the oil in a deep pan and fry everything for about 5 minutes. Add 250 ml of water, bring to a boil, and stir in the vegetable stock. Add the cream cheese to the vegetables and simmer on low heat. Meanwhile, cook the tagliatelle according to the package instructions. Season the vegetable sauce with salt, pepper, and vegetable stock, if desired. Serve the tagliatelle with the vegetable sauce and garnish with plenty of parsley. If you like, you can also simmer the parsley briefly with the vegetable sauce. The vegetables can be swapped; the sauce also tastes great with broccoli instead of cauliflower.
