Ingredients for 4 servings:

  • 1 small head of lettuce
  • 1 tbsp oil
  • 1 small onion(s), finely chopped
  • 1 clove(s) garlic, finely chopped
  • 400 ml vegetable stock
  • 200 g peas, frozen
  • 200 g cream or Cremefine
  • Salt
  • chili powder

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Sounds unusual, but tastes incredibly delicious

Wash the lettuce leaves thoroughly and drain. Heat the oil in a pan, sauté the onion and garlic. Deglaze with the broth. Add the peas to the broth and simmer gently for 5 minutes. Finely chop the lettuce leaves and add them. Simmer for another 2 minutes. Add the cream to the soup and puree everything with a hand blender. Season with salt and chili powder. Reheat the soup briefly and serve. I like the soup best with fried ham or bacon and homemade croutons.
