Sweet potato soup with carrots

Ingredients for 4 servings:

  • 5 large sweet potatoes
  • 4 small carrots
  • 1 m.-sized onion(s)
  • 750 ml vegetable stock
  • 2 tsp, heaped crème fraîche
  • some salt and pepper
  • nutmeg
  • 1 baguette(s)

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

simple and delicious

Peel and dice the sweet potatoes and carrots. Boil in salted water until tender. Dice the onion and sauté lightly in a saucepan. Drain the sweet potatoes and carrots and add them to the onions. Add the vegetable stock and bring to a boil briefly. Remove the pan from the heat and blend the soup until smooth. Season with salt, pepper, and nutmeg. Serve the soup, gently stirring in 2 teaspoons of crème fraîche. Slice the baguette and serve with the soup.
