Ingredients for 1 servings:

  • 300 g flour
  • 3 eggs
  • 1 packet of vanilla pudding powder
  • 110 g sugar
  • 100 g erythritol (sugar substitute)
  • ½ pack of baking powder
  • 200 ml cream
  • 1 shot of rum
  • 2 apples

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

quick and easy, no butter, little sugar

Beat the sugar, erythritol, and eggs until frothy. Add the cream. Gradually add the flour, pudding powder, and baking powder and mix well. Stir in a good shot of rum. Pour the batter into a round cake tin and level the surface. Now peel and core the apples, and cut them into wedges. Place the apple slices on the batter. Bake in a preheated oven at 180 degrees Celsius on the second rack from the bottom for about 30 minutes. Makes 8-16 slices, depending on how big you cut the slices. The calorie information per slice (270) is for 1/8 of the whole cake, so it’s quite a large slice.
