Soy sauce with peppers and tomatoes

Ingredients for 4 servings:

  • 200 g soy granules
  • 500 ml vegetable stock
  • 1 dash of soy sauce
  • 2 tbsp oil
  • 4 bell peppers
  • 10 tomatoes
  • 1 onion(s)
  • 2 cloves garlic
  • Tomato paste
  • Paprika powder
  • oregano
  • Thyme
  • salt and pepper
  • 1 pinch of cinnamon
  • 1 pinch(s) of sugar

Instructions

Working time approx. 20 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 20 minutes

Bring the soy granules to a boil with the vegetable stock, add a dash of soy sauce, some tomato paste, and pepper. Then turn off the heat and let the mince swell for about 20 minutes. Drain the stock and let the mince drain well. In the meantime, wash and chop the peppers and tomatoes, peel and finely dice the onion, and peel and press the garlic. Heat the oil in a large pot and fry the onions until translucent. Briefly fry the garlic, then add the soy mince and fry everything a little longer. Add the peppers and tomato pieces and deglaze with a little water, if desired. Add the paprika, oregano, and thyme. I also add a pinch of cinnamon and sugar. Cover and simmer on low heat for about 20-30 minutes, stirring frequently. Add a little more water if needed. Season to taste with salt, pepper, the three spices, and tomato paste. Serve with rice.
