Lentil noodles in curry sauce

Ingredients for 2 servings:

  • 1 m.-sized onion(s)
  • 1 cm garlic clove(s)
  • 2 servings of lentil noodles
  • Salt
  • 1 can tomatoes, chopped, approx. 400 g
  • 1 can coconut milk, approx. 400 ml
  • 1 tsp, heaped curry powder
  • 1 tbsp, heaped herb mix
  • salt and pepper
  • 1 pinch of chili powder

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Low-carb

Finely chop the onion and garlic. Cook the lentil noodles in a pot of salted water for about 8 minutes. Fry the chopped onion and garlic in a pan until slightly crispy. Add the chopped tomatoes and coconut milk to the pan and add the spices. Season the sauce to taste and stir in the herb mixture. Add the cooked lentil noodles to the sauce and simmer gently for another 3 minutes. Wild or smoked salmon goes very well with this dish.
