Pea soup with mint

Ingredients for 2 servings:

  • 1 small onion(s)
  • ½ garlic clove(s)
  • 1 tbsp butter
  • 125 g peas, frozen
  • ¼ ml vegetable stock
  • e.g. salt and pepper
  • 50 ml milk
  • e.g. mint

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

Hearty cappuccino with milk foam

Peel and finely dice the onions and garlic. Melt the butter in a pan and sauté the onions and garlic until translucent. Then add the peas, top up with the stock, and simmer for five minutes. Add the fresh mint, purée the soup with a hand blender, and then pass it through a sieve. Season with salt and pepper to taste. Heat the milk in a small saucepan and froth it with a hand blender until fluffy. Pour the pea soup into a cappuccino glass, top with the milk foam, and serve.
