Spicy noodle soup

Ingredients for 3 servings:

  • 300 g pasta
  • 50 g soup vegetables, also frozen
  • 1 tbsp oil (curry)
  • 1 tbsp olive oil
  • some salt
  • some pepper
  • some parsley
  • 1 liter vegetable broth

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

my own creation, which is very popular

Lightly fry the soup vegetables in the oil and then briefly stir in the parsley. Deglaze with the vegetable stock and add the noodles. Season with salt and pepper, but be careful with the pepper, as the curry oil is already quite spicy! Simmer everything until the noodles are tender. This is a very quick dish that tastes great and is especially recommended on cold days.
