Quick, easy vegetable spaghetti salad

Ingredients for 2 servings:

  • 1 m.-large cucumber(s), organic
  • 4 m.-large carrot(s), organic
  • 1 tbsp ajvar
  • 3 tbsp, heaped hazelnuts, ground or finely chopped
  • ½ tsp honey
  • 2 tbsp olive oil or argan oil
  • some salt and pepper
  • 1 shot of apple cider vinegar or lemon juice

Working time approx. 10 minutes; Total time approx. 10 minutes

low carb, quick, easy

Using a spiralizer, cut the cucumber and carrot into spaghetti strips. You may need to trim the middle part of the cucumber occasionally, as otherwise too much water will escape. The middle parts created during the spiralizing process can be chopped into small pieces and added to the salad. Make a dressing with the remaining ingredients and pour it over the vegetable spaghetti in a salad bowl.
