Vegan minced meat substitute made from tofu

Ingredients for 4 servings:

  • 500 g natural tofu
  • 2 tbsp tomato paste
  • 1 onion(s), red
  • 1 garlic clove(s)
  • 1 ½ tbsp flaxseed meal
  • 3 tbsp water
  • 50 g oat flour
  • 1 tsp salt
  • 2 tbsp soy sauce
  • 1 tsp oregano, dried
  • 1 tsp sweet paprika powder
  • 1 tsp cumin powder
  • 2 tbsp parsley, fresh
  • some oil

Instructions

Working time approx. 15 minutes; Rest time approx. 50 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 20 minutes

Wrap the natural tofu in a kitchen towel and pat dry on all sides, applying light pressure. Ideally, wrap the tofu in a kitchen towel, place a weight on top, and let it drain for 30 minutes. Mix the ground flaxseed with water and let it soak for 10 minutes. Crumble the tofu finely into a bowl with your fingers. Finely dice the onion. Finely chop the garlic and parsley. Add the tomato paste, oat flour, salt, soy sauce, oregano, paprika, cumin, and ground flaxseed to the tofu. Mix everything well and let it sit for 20 minutes. Fry the mixture in a large pan with a little oil until crumbly. Tip: You can then make a delicious tomato sauce and add the vegan mince. Serve over pasta.
