Ingredients for 4 servings:

  • 500 g potatoes, floury
  • 50 g Parmesan, grated
  • 250 g cream cheese
  • salt and pepper
  • nutmeg
  • 60 g sunflower seeds, chopped
  • 2 tbsp olive oil
  • 2 tbsp breadcrumbs
  • herbs, mixed, frozen
  • 2 eggs

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 20 minutes

Peel the potatoes, cut them into chunks, and boil them in salted water for about 20 minutes. Drain, allow to cool, and mash. Add the Parmesan cheese, eggs, and cream cheese. Season with salt, pepper, and nutmeg. Pour the mixture into a greased and sprinkled springform pan (26 cm). Mix the sunflower seeds with olive oil and breadcrumbs and sprinkle over the cake. Bake in a preheated oven at 200°C (400°F) for 45-50 minutes (use your own oven’s temperature for the best results). Serve with mushrooms or as a side dish with pan-fried foods.
