Mango-coconut semolina pudding

Ingredients for 4 servings:

  • 200 ml mango puree, from the can
  • 200 ml coconut milk
  • 4 tbsp semolina
  • 1 apple, grated
  • 1 tbsp coconut oil
  • 3 tbsp cane sugar
  • 3 tbsp desiccated coconut

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Briefly toast the semolina and desiccated coconut in coconut oil. Then add the sugar and caramelize briefly. Add the mango puree, apple, and coconut milk and bring to a boil. Turn off the heat and simmer until the semolina is cooked.
