Ingredients for 2 servings:
- ½ cup brown rice
- 1 cup coconut milk
- 2 cups water
- 1 tbsp chia seeds
- 1 ½ tbsp vanilla pudding powder
- 1 ½ tbsp sugar
- 1 pinch of salt
Instructions
Working time approx. 5 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 50 minutes
Combine the coconut milk and water in a saucepan and bring to a boil. Add all the remaining ingredients. Simmer on low heat with the lid on for about 45 minutes to 1 hour, stirring occasionally. Tips: If you don’t like the vanilla flavor, you can simply use starch. Flax seeds can be substituted for chia seeds, but you can also omit them entirely. Adjust the amount of sugar to your liking. Note: 1 cup here means 240 ml. Serve best with cinnamon and fresh fruit.
